Named after the French term for Shiraz, this Syrah Gin features cool-climate fruit harvested from a local vineyard near Hall, ACT in 2023. The ripe, plummy fruit was partially fermented before the addition of a lemon, spice, and juniper base gin to halt fermentation, leaving behind some of the natural grape sweetness. Partial fermentation allows for a better integration between the fruits and the base gin. Rather than just using Big River’s classic dry recipe, the base gin was designed from the ground up, specifically tailored to match the plum & spice notes of the Syrah fruit.
Serve with a bitter lemon tonic and a lemon twist, or enjoy the bold flavours neat over ice. Or try it in a cocktail.
